This honey processed pacamara peaberry comes to us from Mapache Coffee. This 5th generation company is located in the Apancea Ilamatepec mountain range in El Salvador. The coffee itself comes from the highest point in Finca El Naranjito, the heart of Cerro El Tamagas, and is processed Mapache’s mill, using exact drying techniques on raised be to maintain consistency. Mapache Coffee thinks of the forests first when it comes to growing and processing its coffee. Each farm has canopies protecting its plants and soil, and their mills use limited amounts of water while often recycling the water throughout coffees to ensure limited water waste. They also take any cherry pulp that’s left and use it as a compost fertilizer for the soil to ensure the soil has proper nutrients.
This delicate and well-balanced cup has tasting notes of peach, raisinets, and nougat. It was grown at an elevation between 1,200 and 1,400 m.a.s.l.
